Our Ramen is the Hakata type, which is a specific type of Ramen that originated in the Hakata district of Fukuoka city. It's well known for the Tonkotsu, pork broth which is gently simmered to develop subtle & rich umami flavours. |
Another distinguishing feature of Hakata Ramen is the noodles.

Hakata ramen noodles are thinner than other ramen noodles & are served slightly more firm There are 3 different textures: hard (kata), normal (futsu), or soft (yawaraka).
The noodles & broth are important for Hakata Ramen. Usually, it is simply topped with slices of Chashu, green onions, and pickled ginger. Additional ingredients can include a soft-boiled egg, wood ear mushrooms, kombu, nori, chili bean paste, sesame seeds, or bamboo. |
